Niman Ranch started business nearly thirty years ago in Marin
County, just across the Golden Gate Bridge from San Francisco. They still raise
cattle on the original ranch, but have expanded to sell pork and lamb, too. They
offer their beef, pork and lamb to restaurants, retailers and directly to

Beef
We begin by raising Angus, Hereford and Short Horn cattle. We think these
breeds produce excellent eating quality beef that is well-marbled and
tender. We never use growth-promoting antibiotics or hormones. We never
feed our cattle meat or meat by-products such as chicken feather, chicken
litter or fish meal. Our cattle graze on pasture for 14 to 18 months.

We raise our hogs on family farms on green pasture and deeply bedded pens.
Find the perfect cut for your needs and the right way to cook it. Enjoy a

chops for your elegant dinner.

Lamb
At Niman Ranch, our goal is to produce spring lamb flavor year-round. We
start with the finest breeds, primarily Suffolk, Rambouillet, Dorset,
Corriedale and Columbia lambs. We raise our lambs with care on rolling
golden hills near Rio Vista, California, and on the open meadows of wild
flowers and aspen groves in the Wasatch - Cache National Forest in
northern Utah.

Paté is the French word for, "dough", "paste", "batter", or "pastry." Our patés are made by Rougie in Perigord,
France from highly seasoned duck, pork and/or goose meat or duck or goose
liver preparations.

Ham
Ham means pork which comes from the hind leg of a hog. Ham made from the
front leg of a hog will be labeled "pork shoulder picnic. Hams may be
fresh, cured, or cured-and-smoked. The usual color for cured ham is deep
rose or pink, fresh ham (which is not cured) has the pale pink or beige
color of a fresh pork roast, country hams and Prosciutto.
