This caciotta is bathed in Barbera wine, giving it a tart, fruity
flavor. The Barbera variety's origins are extremely ancient but the
first documents in which it is cited date to only several centuries ago.
In fact, the first formal citation of Barbera appears in a document of
the 17th century that is now preserved in the city hall of Nizza
Monferrato. Praised by such outstanding poets as Carducci and Pascoli,
Barbera is still recognized as an exceptional wine by many experts of
the modern day.
Briscole al Barbera is an exquisite, handmade specialty item
that can be enjoyed both before or after a meal. A small cheese from
Verona is called a caciotta. Made from either cow's or sheep's milk,
caciottas are handmade treasures whose recipes dates back several
centuries.

Wine Coated Cheeses
Wine Coated Cheeses are washed in a brine solution which
contain wine. This washing helps to spread the culture growing on the
surface of the cheese, control the maturation process and prevents the
cheese from drying out. Wine Coated
