Buffalo Blue is the latest in Shepherd's Purse's range of specialty blue-veined cheeses.
Hand made from locally sourced Water Buffalo milk in Yorkshire. The cheese
is soft and creamy in texture with a luxuriously smooth, tangy flavour
that is surprisingly light on the palate. It complements both Yorkshire Blue and Mrs. Bells Blue. Judy developed this cheese when offered some buffalo milk by a local farmer who discovered the high nutritional content in the milk that would benefit his son who suffers from cystic fibrosis.
Buffalo Blue is much whiter than her other blues but its texture is very similar: soft and spreadable. It has a rich yet delicate, smooth taste which leaves the palate feeling fresh.

Cheese can be made from cows' milk, sheep's milk, goats' milk, buffalo milk and even reindeer milk (which is very high in fat). The selection of the milk and the pasture from which it comes is the main difference between varieties. Turning milk into cheese is not particularly difficult and it is the small variations in temperature, time and treatment that produce the vast choice of cheeses. |
