While purists and snobs hate flavored cheeses, we find them to be
thoroughly enjoyable, especially for snacking. Such cheeses are also
wonderful for melting over meats on the grill.
Beemster with Garlic: This cheese from Northern Holland is Gouda
with a twist. The addition of garlic gives this otherwise mild cheese an
interesting depth of flavor without dramatically changing its nature.
Chili Pepper Pecorino: Pecorino is the generic name for Italian
sheep's milk cheeses. This special pecorino is speckled with red pepper
flakes that give it a moderate spiciness that just tickles the back of
your throat without setting your mouth on fire. Aged for over three
months, this cheese has a firm texture that makes it a good candidate for
slicing or grating.
Red Dragon: Imported from Wales, Red Dragon (also known as Y-Fenni)
is a smooth, firm, tasty Cheddar blended with Welsh brown ale and mustard
seeds. This buttery, spicy cheese has plenty of bite, but is not too hot.
Not only do the mustard seeds give Red Dragon a marvelous flavor, but also
lend it a unique texture. The seeds crackle and pop as you bite into them.
