Made in Green County, Wisconsin, in the lush heartland of America and
American cheese making, Knight’s Vail is a cow’s milk cheese that
represents the cheese making techniques of the people who settled that
area of the country centuries ago. It is a new cheese made by Roth Käse,
makers of award-winning Gruyere. The methods used in it production combine
the traditions of German and Norwegian cheese making. A small, round,
semi-soft cheese with small holes, Knight’s Vail starts life as a
butterkäse made from fresh whole milk. Butterkäse is a semi-soft German
cheese, made from cow’s milk. The surface is “rubbed” with a special
yeast-based culture and cured for three to four weeks in high humidity
cellars. It emerges with a light brown surface and a pleasant,
distinctively robust flavor.
