Vadenost,
also called Herrgardost, has been produced since the 18th century and
has a full-bodied, slightly grassy flavor. St. Olof has been made for
centuries by local dairymaids and farmer's wives. Today, it is made in a
rural corner of Sweden near the Baltic Sea. St. Olof is a semi-soft
double rich cheese similar to Danish Havarti. Our new cheese that
finishes off the trio represents Sweden's most successful tastes:
Absolut Vodka and 12-month aged Prästost, the final product being called
VodCheese.
Our Swedish Cheese Board consists of two classics and one new favorite.
Vadenost and St. Olof are two of Sweden's most popular cheeses.
You don’t have to be Swedish to enjoy this fine selection of

Tasting cheese:
Let cold cheese warm up for at least half an hour before bring it to the
table to allow the flavor to develop.
Cover it with a damp cloth if the air is very dry
Cut the cheese into pieces, with an equal portion of rind as well as the
heart and outer bits of the pâte
Remove hard crusts depending on taste.
Offer bread and wine with the cheese. There is nothing to beat
well-matured cheese, crusty fresh bread, and a good wine.
