Yield: 4 servings
Ingredients:
 
8 lbs veal loin (for roasting)
2 tsp cooking oil
  x salt and pepper
1 large canned corn kernels
2 tbsp butter
1 tsp dried chili peppers

Procedures:
1 Preheat oven to 400 F.
2 Season veal with salt and pepper, then pan fry over high heat with oil just to sear - about 2-3 minutes.
3 Transfer to a roasting pan, then roast in the oven for about 40 - 60 minutes, until cooked.
4 Panfry corn kernels and dried chili peppers in butter. Season with salt and pepper.
5 Arrange roast veal on the center of a serving dish, then surround with sauteed corn kernels.
