Procedures:

In a large
bowl, mix together the chopped sage, olive oil, and
cognac. |

Toss and
marinate veal knuckle slices in the sage mixture for
2 hours. |

Season with
salt, pepper and paprika, then cook over a hot
charcoal grill for about 10-12 minutes each side,
until cooked. |
