Ingredients:

veal
knuckles, cut into 3/4 in slices |

onions,
peeled and chopped |
|
3 |

tomatoes, peeled, seeded and chopped |
|

each |
garlic
cloves, chopped |

salt and
pepper for seasoning |

flour |

butter |

bouquet
garni |

white
wine, dry |

seedless
olives, drained (green or black) |
Procedures:

Season
the veal slices with salt and pepper, then lightly coat with
flour. |

In a
pressure cooker, melt butter over high heat. Add the veal
knuckles and saute for about 3 minutes, browning the sides. |

Add the
onions, garlic, tomatoes, bouquet garni, salt and pepper (to
taste). Saute for 3 minutes, then deglaze with white wine. |

Bring to
a quick boil, then cover, seal and cook under pressure for 25
minutes. |

Remove
the cover, then add the olives. Simmer uncovered for 3 minutes,
stirring occassionally. |

Serve
with mashed potatoes and greens. |
